Chocolate is a classic flavor to use in baking that many enjoy. I’ve found that adding in a bit of coffee deepens the flavor and makes the baked goods richer. After some experimentation, I’ve come up with a tasty recipe that coffee and chocolate lovers are sure to enjoy.
Ingredients:
- 1/2 cup of softened unsalted butter
- 1/2 cup of brown sugar
- 2 tbsp of white sugar
- 1 egg at room temperature
- 1 cup of flour
- 1/2 tsp of salt
- 1/2 tsp of baking powder
- 1/4 cup of cocoa powder
- 1/3 cup of instant coffee
- 1 tsp of vanilla extract
- 2+ tbsp of milk
- Chocolate chips (optional)
Directions:
- Preheat oven to 375 degrees.
- In a large bowl, beat butter and sugars with electric mixer or by hand until pale and creamy.
- Add egg and mix until well combined
- In a separate bowl, mix flour, salt, baking powder, cocoa, and coffee.
- Stir dry mix into butter and sugar mix until combined.
- Add the vanilla and milk and mix. Add more milk if needed until the mixture is the consistency of cookie dough.
- Add in chocolate chips if desired.
- Scoop dough into 1-inch balls and roll in instant coffee (optional). Place on a parchment-lined baking sheet.
- Bake for 10-15 minutes or until the tops are cracked and the edges crispy.
- Remove cookies from the oven and let them cool on a wire tray.
