The winter season is upon us, and if you don’t feel like braving the cold to make a real snowman, try making these snowman cookies instead. They’re a delight to eat alongside your hot cocoa or to give in a cookie exchange. Just remember to leave some out for Santa!
Ingredients:
1 cup of white sugar
1 cup of butter
3 eggs
4 cups of flour
1/2 tsp of baking soda
6 tsp of baking powder
1/2 cup of orange juice
4 tsp of vanilla extract
About 1 cup of confectionary sugar
About 1/4 cup of milk
Pretzel sticks
Mini chocolate chips
Baby carrots
Directions:
In a large bowl, beat sugar and butter until pale and creamy.
Add eggs and mix until smooth.
In a separate bowl, sift dry ingredients.
Alternate adding in the dry mix with orange juice. Mix after each addition.
Add in 2 teaspoons of vanilla and mix again.
Cover the bowl with plastic and refrigerate for a half hour. Preheat oven to 350 while the dough is in the fridge.
Remove the dough from the fridge. Scoop out dough and roll it into tablespoon-sized balls, placing them on a parchment-lined baking sheet. Try to aim for an even number of cookies.
Bake for about 8 to 10 minutes or until the edges are lightly golden.
Remove from tray and let cool on a wire rack. Place parchment underneath the wire racks.
Mix milk, confectionary sugar, and two teaspoons of vanilla into a thin icing. Add more milk if it’s too thick and clumpy and add more sugar if it’s too runny.
Dunk cookies into icing and lay back on a wire rack.
Decorate cookies with chocolate chips to make faces. Cut baby carrots into slivers to make noses. Let the icing completely harden.
Break pretzel sticks into halves and insert one into the sides of each cookie.
